A gastronomic journey through the farming landscapes of France

The project

a gastronomic journey into the heart of peasant farming

Every morning, a hundred or so farms write the lines of our menu: a fish landed the day before by a Breton line fisherman, a carrot grown from a seed saved on the farm for generations, raw milk from a hardy Breton breed… These products carry meaning, and they stand apart first of all through their taste, their length, their texture, their finesse and their power — everything that gives them their character.

Every day, Maurizio Madaio and his team compose from these products a gastronomic journey in four or six courses through the farming landscapes of France. Sometimes with a heirloom vegetable that has vanished from market stalls, a local breed saved by a handful of farmers, or a honey that tastes of a landscape and a season. You understand why the role of these farms is so fundamental the moment you taste what they produce: that is what we seek to pass on, through our cooking and our hospitality, over the course of a meal in our house.

Every year, every month, every week reveals these products differently. It is this perpetual discovery, guided by taste and shared with warmth, that we invite you to live.

The chef

Maurizio Madaio

After spells in renowned Michelin-starred houses such as Loiseau Rive Gauche and then David Toutain, Maurizio Madaio joined La Table in 2023 with one ambition: to lead this house, step by step, towards a single goal — building a gastronomic experience that brings together his cooking and the extraordinary network of producers behind Les Résistants.

Maurizio invites you to live a gastronomic journey through French peasant farming, to discover singular products through his own prism, in a cuisine blending vivacity, Italian influence and the French tradition of sauces.

The sommelier

morgane clesse

Trained as a sommelier, Morgane Clesse has built her career within renowned gastronomic establishments, including K2 alongside Chef Pieter Riedijk, followed by Les Airelles Château de la Messardière. Trained by Franck Thomas, France and Europe’s Best Sommelier, and John Euvrard, Best Sommelier and Meilleur Ouvrier de France, she has developed an approach to wine that combines precision, sensitivity and emotion, before naturally moving into restaurant management.

Today, as Manager of La Table des Résistants, Morgane draws on her experience as a sommelier to bring a broader vision of wine service, where wine is above all alive, rooted in its terroir and a reflection of its story.

The winemakers

Championing the work
of our artisan winemakers

We choose the winemakers we work with as demandingly as we choose our food. The immense work, the energy, the philosophy and the intention they put into their wines deserve to be brought to the fore.

And then there are the encounters. We talk, we taste, we laugh. There are women and men behind every wine. We love them as much as we love their wines. That, in the end, is how we chose them.
La Table’s wine list holds around 300 references of living wines. We also make a point of bringing wines to the age that suits them, and we age a great many bottles in our own cellars.

Our charter

More than 250 farmers,
winemakers and artisans

For nearly ten years we have applied the same standard to every product that enters our kitchen, from salt to meat, from vegetables to flour.

Every farmer we choose to work with strictly respects the charter we have drawn up, in keeping with the seasons and with living things.
