The project

A singular project

Since 2017, Les Résistants have brought to Paris’s 10th arrondissement a committed and convivial vision of cooking.

Founded by Florent Piard, a lover of farming, cooking and fine bottles, the project grew out of years spent travelling the roads of France to meet committed producers, breeders, market gardeners and winemakers. Conceived as a direct link between peasant farming and bistro cooking, Les Résistants stand for seasonal cooking — generous and transparent — made exclusively from products sourced through our own network of producers.

Here, every plate and every bottle tells a story, a craft, and a more human and respectful way of producing and consuming.

Today, Les Résistants bring together four Paris addresses — Le Bistrot, La Table, Le Comptoir and L’Épicerie — as well as one in Brittany, in Plœmeur: L’Asphodèle.

What we stand for

Seasonal cooking

Our cooking changes every day with the deliveries, the seasons and the products available. We favour a simple, sincere approach that seeks above all to bring out the best in a product without ever masking it.

Peasant farming

We work directly with producers committed to farming that is local, human and respectful of living things. Every product we select reflects a craft, a standard and a shared vision of food.

Living wines

Our cellar brings together more than 900 references from winemakers committed to living wines, biodynamics and natural practices. A selection conceived as an extension of our cooking.

Respecting living things

Limiting waste, using whole animals, preserving heritage breeds and biodiversity are an integral part of our approach. We stand for a more responsible kind of restaurant, as attentive to taste as to the way things are produced.

La Table
the gastronomic restaurant of Les Résistants

La Table is the gastronomic restaurant of the Les Résistants network. The same standard on the origin of products as at Le Bistrot, but written differently: carte blanche menus built around the deliveries, served to the whole table.

Every plate starts with a producer we know, and with a variety we have chosen to champion.
